This wine is made from the same vineyards since 2002. It is a very old block of Bush vine Chenin Blanc, planted in the 70’s. There is very little vineyard practices used and the old bush vines are allowed to slowly grow even without irrigation. Very low yields peaking at around 35 hl/ha are quite normal for this block. This adds to the concentration and complexity of the final wine. All grapes are handpicked and brought to the cellar as soon as possible. Gentle destemming takes places and skin contact is given on 50 % of the intake. The other 50% is reductively handled, crushed and allowed to settle with commercial enzymes. After a 24–36 hour settling the juice is carefully racked and inoculated with selected cold fermenting yeast. Fermentation will take 10–14 days at around 18 degrees. After fermentation the wine spends 6–8 weeks on the primary sediment to add to the mouthfeel. Light, straw colour. On the nose lots of tropical flavours with dollops of pineapple and white stone fruit evident. The palate is fresh, with good structure and a lovely stone fruit kick. Almost like tasting the minerals of this unique site. A lovely low alcohol unwooded Chenin Blanc that will complement seafood, chicken and long summer nights on a balcony. Enjoy!!
